Choke Recognition & Response Training for Restaurant Employees

105 CMR 590.009: Special Requirements,

(E) “Anti Choking Procedures for Food Service Establishments” Pursuant to M. G. L. c. 94, § 305D, each food service establishment having a seating capacity of 25 persons or more shall:  

(1) Have on its premises, while food is being served, an employee trained in, manual procedure approved by the Department to remove food lodged in a persons throat;

The Department approves the procedure known as the Heimlich Maneuver and the sequence of obstructed airway maneuvers

**Choking Recognition and Response Training Course for Restaurant Workers** This two-hour course is designed to equip restaurant workers and food service personnel with essential skills to recognize a choking victim and respond effectively using Abdominal Thrusts (commonly known as the Heimlich Maneuver). Practical training will be conducted with manikins to ensure hands-on experience. This course is especially recommended for those working in food service or with high-risk individuals. Completion of practical skills will result in participants receiving a “Certificate of Attendance,”

 which may be necessary for compliance with Massachusetts law regarding food safety training. *
